Tuscan cheese is traditionally produced with ewe's milk. Just a few cheeses, mainly underripe cheeses, are produced with goat's or cow's milk. The most typical Tuscan cheese is ripe or underripe pecorino. Each producer obtains a different cheese according to the local peculiar features. Every pecorino cheese varies and has different nuances according to the season it is prepared, to the pasture, to the clay and to the flavours and wild herbs of the area: wild mint, catnip, radicchietto, crescione (Lepidium sativum). These herbs perfume the milk, making it less fat, and give the cheese a fresh and typical aroma. Flavours become more marked with ripening: the sweet taste develops in a spicy note, colour becomes more intense, as well as consistency. Among the most famous are the various cheeses: Pecorino fresh Marzolino, semi-mature pecorino, pecorino

HISTORY of San Gimignano:
The distant origins of San Gimignano are lost in the mists of time and legend. "The Castle in the Forest or Silvia " seems to have been its original name. In the Hellenistic period (III - II c. BC.) Was the seat of a small Etruscan village of which we have historical evidence, by means of reports and tombs found in the area. His story began, however, around the tenth century. taking its name from the Holy Bishop of Modena, St. Gimignano, the savior of the city and is a story of the Middle Ages. From small town began to grow and have a great development, thanks to the Via Francigena that crossed this old Lombard street that connected Rome to France in the Middle Ages. During this period, San Gimignano had an extraordinary flowering of art to adorn the churches and monasteries. At the end of the twelfth century it became a free commune; fought against the Bishops of Volterra and was involved in the conflicts between the Guelphs, supporters of the Pope, and the Ghibellines, supporters of the emperor. In May 1300 Dante Alighieri, Ambassador of the Guelph League in Tuscany. The freedom was maintained until 1354 when San Gimignano was subjected to the Republic of Florence. Since then ended its economic growth, architectural and cultural heritage. Then the plagues and famines that occurred in the second half of 1300 and the first half of the fifteenth century, decimated the population and threw the city into a serious crisis, they saw the towers collapse and ruin the buildings. From the decay and neglect of centuries after it came out when, in more recent times, the city began to rediscover its beauty and to protect his works so as to be a UNESCO world heritage site.
